- Reindeer milk is exceptionally rich in fat and protein compared with most common dairy milks.
- Gjøstein, Holand, and Weladji (2004) reported mean values of 15.5% fat, 9.9% protein, and 2.5% lactose.
- Fat and protein concentrations increased markedly as lactation progressed, while lactose decreased slightly.
