  • Under 21 CFR 131.130, U.S. evaporated milk contains at least 6.5% milkfat.
  • The same standard requires at least 16.5% milk solids-not-fat and at least 23% total milk solids.
  • Unlike sweetened condensed milk, standard evaporated milk does not depend on added sugar for preservation.
